A true foodie at heart, Karen is an experienced food scientist, educator, and culinary explorer with roots in Canada and El Salvador. She's spent years working with everything from ambitious startups to the biggest names in food, bringing her expertise in sensory evaluation, consumer trends, and food safety to every project. Karen's passion for innovation and her deep knowledge of emerging ingredients fuel True Leaves Consulting's mission to transform bold ideas into shelf-ready products. Whether she's analyzing flavour profiles or navigating complex regulations, she combines scientific precision with creative thinking—and always keeps the joy of great food at the center of it all.

Steve is a culinary artist turned product developer, with a background spanning bustling restaurant kitchens and large-scale industrial food production. A self-proclaimed food adventurer, he specializes in vegan and gluten-free innovation and has a gift for taking a home kitchen recipe and scaling it for commercial success. Steve's superpower? Turning "this tastes amazing" into "this is production-ready and profitable." His plant-based expertise and manufacturing know-how ensure every product is delicious, scalable, and built for the real world. When he's not perfecting formulations, you'll find him experimenting with new ingredients and flavour combinations.
